Outside The Recipe- Creative Carrots

A few years ago, I never would have put marshmallows in my vegetables. And I don't plan to make it a habit either. But the other night, I had an inspiration. I put my usual curry, butter, and a sprinkle of salt in our cooked carrots/beans. And the smell actually inspired me to put some marshmallows in too. Eventually they melted as the veggies got stirred around and served, and did they ever taste good!! So good. Definitely a make-again.





  Another inspiration for carrots- carob chips! Carob chips can be found at most health food stores, and are a healthy option to chocolate. For this concoction, I added my usual butter and curry, a sprinkle of brown sugar, and a handful of carob chips.  Once again, it was a big hit with our family. The carobs melted only about halfway so it was easy to get a distinct taste of the carrot-carob mix.
